Happy February everyone! It’s that weird time again, with hybrid working and I have found myself home a couple weeks in a row. Meal prepping is a must during these times for me. It helps me to stay somewhat healthy, while also feeling full! Not to mention, cooking is fun to me, so on the weekends when I do this, it makes me happy.

The only repeats so far are the salad, however I’ve listed different ingredients each time. Having a ready-made salad has been a life-saver for me many weeks. If I don’t have something already chopped and ready to go, I often find myself resorting to a less than nutritious snack. So! Let’s get into it.
Meal Prep February 2022 Edition
Salad: Kale, Apple, Carrots, Avocado
Fig & Goat Cheese Bites: Fig Preserves, Goat Cheese Slice on any cracker of choosing
Tuna Melt on Naan: Exactly as stated. Tuna however you make it, on top of Naan (I like the garlic kind) with the cheese of your choice on top. Oven at 350 for 15 minutes. (Yum)

Also, for gut health, I’ve been adding sauerkraut to my dishes… so there is that.
